Bon appetit🍝
So I made some pasta today with a secret ingredient, it was too good. I did my usual meatless ground, pasta sauce and pasta but this time I added a stick of cinnamon into the sauce while it simmered. The pasta tasted more rich and earthy, I was pleasantly surprised! I was reading an article last week and someone mentioned that they added cinnamon to their pasta, so I was intrigued. After doing some research, I learned that this recipe is influenced by Mediterranean/Middle Eastern dishes and it helps cut the acidity that is usually present in red sauces. I also saw that people add in cloves and cocoa powder too, maybe I’ll try that next time. I will definitely be adding cinnamon to my spaghetti going forward though. It feels nice to continue to develop and curate my taste!
