Vegan Black Eye Peas Recipe

Ingredients

  • 1 bag of black eye peas (dry)
  • 1 Yellow onion
  • 1 Green bell pepper
  • 2 Field Roast fennel and garlic sausages, chopped
  • 6 cups of water
  • Creole Seasoning (No Salt)
  • Paprika

Instructions

  • Soak beans overnight in about 8 cups of water
  • Drain and rinse the soaked beans
  • Sauté the chopped onions, peppers and sausages for a few minutes
  • Season to taste with creole seasoning and paprika
  • Add the rinsed/soaked beans back into the pot with 6 cups of water
  • Let simmer for about 2 hours with the lid on, but tilted
  • Beans will be tender when finished
