Vegan Black Eye Peas Recipe
Ingredients
- 1 bag of black eye peas (dry)
- 1 Yellow onion
- 1 Green bell pepper
- 2 Field Roast fennel and garlic sausages, chopped
- 6 cups of water
- Creole Seasoning (No Salt)
- Paprika
Instructions
- Soak beans overnight in about 8 cups of water
- Drain and rinse the soaked beans
- Sauté the chopped onions, peppers and sausages for a few minutes
- Season to taste with creole seasoning and paprika
- Add the rinsed/soaked beans back into the pot with 6 cups of water
- Let simmer for about 2 hours with the lid on, but tilted
- Beans will be tender when finished
